I am having company over the holidays and doing a Turkey in the oven and a roast on the bar b que. I have never cooked a roast on the bar b que. What is best way to cook it, season it etc... to ensure it is tender and tasty.

Thanks very much!|||Season to your taste, use the bbq rotisserie, after heating use only the rear burner to cook and place a foil pan on the grill under the roast. Baste often with beef stock or red wine with your favourite seasonings added, after a couple of times basting you can use the drippings from the foil pan to baste. Takes a little longer than the oven to cook because some heat is always lost opening the lid to baste.|||Seaon however yopu normally would. Then you can wrap in tin foil and put in the b-b-q. Just keep a low flame or ht coals. You want low and slow. Then go get one of those thermometers where you set the temp you want, and then leave the probe in the meat. It will tell you when it is done. (also set the thermometer about 10 degrees low, to allow for carry over cooking.)|||If I was cooking for company I would not be making something I had not done before. Best to experiment on the family and not friends. If this is a must than read your cookbook well for the directions.
